Disney California Adventure looks best after dark. Compared to Disneyland, California Adventure has more outdoor rides that are especially fun at night, and the bright lights at Paradise Pier and in Cars Land make both of them fun to walk through when the sun is down.
You can't do everything at Disneyland in a single day, and you shouldn't feel pressure to. You can ride all the rides without much difficulty many days, but you'll miss out on some other attractions, entertainment, and characters. You'll want to know what your priorities are before you get to the park.
You definitely do not need a Park Hopper ticket at Disneyland, especially if this is your first visit and you are just getting to know and explore the parks. If you only have one or two days, you might want to spend a full day in each park. There is plenty to keep you busy in each park, especially Disneyland Park.
While buying in person is possible, I highly recommend that you purchase your tickets ahead of time to avoid the worry of being able to get same-day reservations. In order to enter the parks, you need both a ticket and a theme park ticket reservation.
Unfortunately, you will not be able to use the two 1-day theme park tickets to enter two theme parks on the same day. However, if you desire to visit two theme parks in one day, you can add the park hopper option to an existing ticket.
