Even if someone steals your phone, they cannot see your full card numbers or make purchases without your biometric data. Furthermore, Apple Pay uses "tokenization," meaning every transaction uses a one-time unique dynamic security code rather than sharing your actual card details with the merchant. If you lose your device, you can instantly disable the Wallet by putting the phone into "Lost Mode" via iCloud, which suspends all cards remotely. The only real "risk" is social engineering—where someone tricks you into authorizing a payment or sharing your passcode—but from a technical standpoint, the Apple Wallet is significantly more secure than carrying a physical leather wallet.
