One of the most popular events at Walt Disney World has been the Disney After Hours events that are held in select theme parks on certain nights. The event requires the purchase of a separate ticket, and while they are not inexpensive, the events are popular and often sell out.

This means that you'll have access to select attractions, character meet-and-greets, and free snacks with very little wait time, as the crowds are much smaller than during regular park hours.
Even if a specific park's reservations are sold out, other parks are typically available. For example, Magic Kingdom reservations may be sold out, but Animal Kingdom may have reservations available. And with park hopping tickets, visiting Magic Kingdom is still possible even if reservations aren't initially available.
Disney After Hours is a specially ticketed event (meaning it's a ticket that is purchased separate from regular park tickets) that allows people to enter Walt Disney World's Magic Kingdom at 7 p.m. and stay until midnight or 1 a.m. (ending time varies by date).
Evening At Hollywood StudiosThe earlier showtime typically has the advantage of lower crowds, but you often won't be able to do any rides after it, effectively shortening your day. The later showtime will have higher crowds, which means you'll want to be in line at least 30 minutes early.
To that point, we do not recommend only a half-day at DHS if you're a first-timer. Although there are a number of time-consuming stage shows without much repeatability, we usually do an entire day at Disney's Hollywood Studios even as WDW diehards. DHS is most definitely a full-day park, just to be clear.
However, that has changed. You now can only park hop AFTER 2PM. So you'll have to wait until well after lunchtime if you're planning on visiting another park. However, this rule is different for Annual Passholders.

The answer to your question is yes and no. All Walt Disney World theme parks have ticket windows that sell tickets when available. So yes, in theory, tickets can be purchased at the gate. However, I do not recommend waiting until you are at the gate to purchase your tickets.
You don't need a parks pass reservation for any parks you visit after 2PM after you visit your first park, however you do need to start your day at that first park with a parks pass reservation.

EPCOT is arguably the least family-friendly park at Walt Disney World, so you may not need more than a few hours to do everything of interest if you have small children. With that said, a full day at EPCOT is highly recommended for first-timers.
