If you're traveling in coach on some of Amtrak's long-distance train services, you'll now have the opportunity to use the dining car onboard. Coach passengers will now be able to enjoy full-fledged meals for an additional cost in the dining car, which was a beloved service removed during the COVID-19 pandemic.

Yes water fountains are available for free in coach on the superliners. For cafe purchases only debit/ credit cards are taken; no cash. I drank the water with no problem. I have drank the tap water on the train dozens of times without any issues.
It can easily hold 3-6 soft drinks and enough ice to last about 24 hours. It fits the 12 x 12 x 12 size and is easy to take along.. You don't have to go big on overnight trips.
