In his capacity as Executive Chef at The Ritz, Williams oversees a kitchen brigade of over 60 chefs and is responsible for the seasonal menus as Michelin-star chef for The Ritz Restaurant, The Palm Court renowned for the world-famous Afternoon Tea, The Rivoli Bar and Room Service.

This extensive team is overseen by Executive Chef John Williams MBE, with a recently appointed Head Chef (such as Deepak Mallya in late 2025) serving as second-in-command. The brigade is divided into specialized stations (Saucier, Patissier, etc.) to serve the hotel's diverse dining venues, including the Two Michelin-starred Ritz Restaurant, the world-famous Afternoon Tea at The Palm Court, and the Rivoli Bar. Because The Ritz holds a Royal Warrant for banqueting and catering, the sheer number of chefs is necessary to maintain the highest levels of precision and "Palace-style" service for in-room dining, private banquets, and the hundreds of guests who visit daily for one of the most prestigious dining experiences in the world.
