If you really just want to do theme parks every single day of your trip, then I'd suggest 2 full days at Magic Kingdom, 1 or 2 full days at Epcot, and then one day at each Animal Kingdom and Hollywood Studios.
Spending Money on your Disney World VacationAround $50 per day per person is a good start. A bit of extra cash is great for buying snacks, souvenirs, and alcohol. Disney prices are higher than regular stores, but they offer unique items and services you can't find anywhere else.
Full day park if you want to do everything & savor it. With good crowds, and doing almost everything, Animal Kingdom is like a 85% of your day park. Magic Kingdom is like a day and a half park.
As a general matter, Animal Kingdom is the park that requires the least strategy and is the easiest place to beat the crowds in all of Walt Disney World. It doesn't require Genie+ or Individual Lightning Lanes, and is pretty easy to knock out everything–and then some–if you stay for a full day.
Best Times for Adults to Visit Disney WorldOne of the best times for adults to visit, though, is late summer and early fall, when summer-break crowds give way to (relatively) uncrowded autumn bliss.
A full day to take in everything would be best. Make sure you get fast passes for the rides that usually have the longest wait times, like toy story ride, rockin roller coaster, and tower of terror....all great rides not to be missed. All the shows are great, so you can't go wrong with any you choose.
Of course, with so much to ride, eat, see, and do, you could spend at least one full day at Epcot, and some guests staying for a week opt to visit more than once, coming back another afternoon to take advantage of the restaurants and entertainment.
But for your overall vacation, I recommend 3 days so you can take a rest day in between. I'm sure you know that theme parks require a lot of walking and Florida weather can be unpredictable. Having 2 days with an additional rest day planned, allows you to have some flexibility in your trip and a much-needed break.
You can absolutely do this, but you won't get to go on most of the good rides. Animal kingdom is only a half day park anyway, so start there and then do Magic Kingdom after. For the next day I'd start early in HS and then take the sky ride thing over to EPCOT.
