How many times can you modify a Lightning Lane reservation?

Once “Confirm change” is selected, the original Genie+ Lightning Lane selection will be canceled for those Guests. Guests can make additional Genie+ Lightning Lane selections once they redeem their current selection, their full arrival window has passed, or after 120 minutes has passed from the original booking.

You can modify the modified Lightning Lane (and so on), meaning there's no limit to modifications. I modified my Jingle Cruise Lightning Lane about 5 times before all was said and done. Modifying does not reset the clock on the 120 minute rule.
