How strict are Ryanair with checked luggage?

In my experience, they're very strict. Every time I've flown with them, they have a measuring guide and the bag has to easily fit in it - you have to slide it in with ease, you can't jam it in there. They make a LOT of money from charging people with oversized baggage...
