I've stayed at various locations in Dubai, some more than 2 weeks and never been bored. I definitely don't think two weeks is too much, there is so much to do and you can do a day trip to Abu Dhabi and the highly recommended trip to Musandam in Oman to sail on a traditional dhow and see dolphins in the wild.
