Palermo and Catania have very similar climates, with warm summers and mild winters. Both cities reach temperatures of 90°-100°F in the summer, and temperatures rarely dip below 45°F in the winter. Catania tends to be slightly warmer than Palermo due to it being closer to the equator.

Palermo has much to see and do, and it has many outstanding restaurants. Trapani doesn't offer many attractions, but there is a beach in town. You could bus to the much nicer beach in San Vito Lo Capo (an hour away by bus), or hydrofoil to the beaches on Favignana.

Palermo is relatively small, everything that you might need is very close, it has sunny beaches and offers a much cheaper and relaxed style of life and a very friendly atmosphere. Since it's so small it's no wonder that this city is much cheaper than, say, Milan, Rome, Florence, etc.

Taormina works better if you want to mix some beach time with history and architecture. Catania is my favourite: there are more activities for families to enjoy. It's a big city with plenty of kid-friendly attractions. The only thing that lacks is a good beach.

Since Sicily is farther south in the Mediterranean, it's generally much hotter than Sardinia. So if you choose to go to Sicily vs Sardinia, I'd recommend going sometime between October and April to avoid the intense heat and crowds of the summer.
