The Animal Kingdom and DIsney-MGM are probably the 2 other theme parks that are better for your kids. EPCOT is more for older 'kids' in my experience. Thought about Sea World as wel as a possibility?

EPCOT is one of the biggest parks of all and takes a whole day easy. The illuminations at 9pm is worth staying for. AK is also fairly large. The up and down is, you could do it, you will lose around 1 to 2 hours going between parks and you probably wont see 50% of what both parks offer.

You can catch a bus from Epcot that will take you directly to Disney's Animal Kingdom. When you exit the park, simply begin to move to your left and follow the signs to Bus Transportation. As you get to the actual bus stop, there will be a sign indicating which stop is for Disney's Animal Kingdom.

The only option for getting from Animal Kingdom to EPCOT, Hollywood Studios, or Magic Kingdom is to use a Disney bus. Animal Kingdom is a little further out from the rest of the parks, so it's not connected to the others via the Monorail, Skyliner, or boats.
