The Wizarding World of Harry Potter at Orlando is the biggest park, with 2 zones across Universal Studios and the Islands of Adventure. A beautiful replica of the scarlet Hogwarts Express shuttles guests between the 2 parks, Hogsmeade and Diagon Alley.
If you're more interested in large rides like roller coasters, Universal is going to be your best bet. The same is true if you're a big fan of Harry Potter. If you don't mind some of the more family-friendly rides or you have little ones to bring along, Disney may be a better option.

Overall we would always lean towards Hogsmeade for early park admission. The main reason is Hogsmeade is home to two of the most popular rides at Universal: Hagrids Magical Motorbike Adventure and Harry Potter and the Forbidden Journey.
You can only access this attraction if you have a park-to-park ticket, though! In my opinion, you can absolutely fit everything you want to do in the Wizarding World of Harry Potter in one day, even without Express Passes. You just need to be strategic about your itinerary!
