If you're going in the peak season (June-Aug), I'd opt for weekdays. Because Ibiza will be overcrowded even on weekdays, however it may be a bit easier to get into clubs and bars, since weekends are simply impossible - you stand in a queue for 2 hours and are then squashed in like a sardine.
