For convenience and timings, I'd say Gatwick even though they are both on the same train line which goes through the centre of London (50 minutes to St. Pancras). Luton is more of a low-cost, no frills hub and is much smaller than Gatwick. I would go with Luton but see which airport has the cheapest fares.

The cheapest option between Luton Airport and London are the Luton Airport bus services. The stops in London are also in all probability going to be much nearer your accommodation than the main alternative train service.

The Stansted Express is the quickest way into central London, with trains to London Liverpool Street taking 47 minutes. National Express and Airport Bus Express offer coach services to London. Black cabs do not operate from Stansted, so book a licensed minicab instead.
