It depends on the restaurant. Usually a good bit of the food gets repurposed, like say the fish dish on Monday will become fish pie or fish soup on tuesday. Some buffet restaurants would then throw out the food that can't be repurposed. A very few actually donate the cooked food to a homeless shelter and so on.
