Mondays and Fridays are hit-or-miss with crowds because you'll find that there are still many Guests who are kicking off their vacations or getting one more day in before returning home. Saturdays and Sundays are usually the busiest days of the week.

As a general matter, Animal Kingdom is the park that requires the least strategy and is the easiest place to beat the crowds in all of Walt Disney World. It doesn't require Genie+ or Individual Lightning Lanes, and is pretty easy to knock out everything–and then some–if you stay for a full day.
So when should you visit for the lowest crowds, generally? Go on a Wednesday! Fewer guests head to EPCOT mid-week and you can hopefully then walk up to the festival booths without having to wait in long lines. As a bonus tip — make sure to visit the festival booths early in the day.
