Why do Americans pronounce the Z in Ibiza?

Because that is, more or less, how it's pronounced in Castillian Spanish, which is the standard dialect of European Spanish. 'Z' and 'C' before 'I' or 'E' are pronounced like 'TH' in English 'Thing'. The people of Ibiza themselves call it 'Ibissa', in the local dialect of Catalan.
