I always take them off for roller coasters. I wouldn't chance them staying on. Anything that is slip-on can always come off easily on a roller coaster. When I went to Unversial I worn a pair of crocs flip-flops.
While on the subject of sandals, lets bring up Crocs. These things can be incredibly uncomfortable on your feet at a theme park due to the heat and water/sweat combination. Blisters, anyone? Crocs are comfortable wearing around the house and maybe to the grocery store, but not at a theme park for hours on end.
The two best options for our Disney park days are the CloudFoam or the Ultraboost. I personally own many CloudFoam and love them. The CloudFoams shoes are great because their uppers provide a sock-like snug fit, and their cushion helps to provide all day comfort.
The World of Disney in Downtown Disney does sell the real thing Crocs, and also has the special Disney inserts. But it is by far not the cheapest place to buy them. It is better to find them off-site, and then just buy the add-ons if you want at Disneyland.

Hi Leti! Yes, you can wear flip flops on most all of the rides in Walt Disney World. The only one that I can think of that will made Guest take them off and leave them on the floor is Soarin' (this is so that they do not come off of your feet and hit another guest during your Soarin' flight).
While shoes must be worn, there is no specific footwear requirement for attractions within Walt Disney World Resort theme parks, although skates or shoes with wheels are prohibited. I have seen Guests wearing everything from basic flip-flops to stilettos. (Though I do not recommend either of those options!)
