The park is smaller than Epcot or Magic Kingdom, and while it boasts heavy hitters like Star Wars: Galaxy’s Edge and Toy Story Land, the total number of rides is relatively low. Spending two days allows you to experience the high-demand attractions like Rise of the Resistance and Slinky Dog Dash multiple times without the stress of a ticking clock. It also gives you ample time to catch the various shows—such as the Indiana Jones Stunt Spectacular and Fantasmic!—which are time-consuming to fit into a single day. If you have a park hopper ticket, you might find that 1.5 days is the perfect "sweet spot," allowing you to finish the major attractions and then hop over to Epcot for dinner.

I think you'll be happy to know that you can still absolutely walk from Disney's Hollywood Studios over to EPCOT or vice versa if you prefer. The walk itself is about 20-25 minutes depending on your pace and can be absolutely stunning on a sunny day.

However, that has changed. You now can only park hop AFTER 2PM. So you'll have to wait until well after lunchtime if you're planning on visiting another park. However, this rule is different for Annual Passholders.

You can absolutely do this, but you won't get to go on most of the good rides. Animal kingdom is only a half day park anyway, so start there and then do Magic Kingdom after. For the next day I'd start early in HS and then take the sky ride thing over to EPCOT.

The Park Hopper option is slightly more expensive than your regular park ticket, but allows you to quite literally hop between the parks, or visit multiple parks a day. This is really the only way to do the parks, and even if you are staying for more than 2-3 days, I still recommend getting the park hopper option.
