AF has the best service and food IMO (but also I speak French so it may be biased). KLM is great because AMS is a way nicer airport to transit through vs CDG. Seat depends on the aircraft type and cabin class. The service is better on KLM and AF.

However, Skytrax ratings are based on a variety of criteria and Emirates may not have met all the requirements for achieving five stars. Etihad Airways earns third consecutive five-star rating at Apex Awards. Abu Dhabi, United Arab Emirates – Etihad Airways, the UAE's national airline, has been rated as a Five-Star Global Airline by the Airline Passenger Experience Association (APEX) for the third consecutive year.
While some airlines require a third pilot for flights longer than seven hours, others may extend it to 10 hours. If the flight is longer than 12 hours, a fourth pilot (second officer) is required.
