There are 2 airports in Rome. From the city centre to the main airport (Roma Fiumicino, also known as Leonardo da Vinci airport) is 40 minutes approximately. During rush hours (from 6:30 to 10:00 and from 16:00 to 20:30) it may take 45-60 minutes.
One hour is too short no matter where you are coming from, but it seems you have already booked it and can't fix that. You do not need travel insurance to catch the next flight if a delay at FCO causes problems at LAX. However,it does help if a bag is lost or damaged during transit and you have to buy new luggage.

Chances are coming from the US you will deplane and be bussed to the terminal (congratulations!) and will have to go through passport control, collect your luggage and customs (usually there is no check at customs). In that case, it could take from 45 minutes to 90 minutes. Your arrival time is a very busy time.
Absolutely worth the €5 if there is a line. I just flew in to FCO and waited 60 minutes in line at customs. A couple ahead of us bought the Fast Track pass on their phone while waiting in line. Transfers. Fiumicino has two terminals (Terminal 1 & Terminal 3). Both terminals are connected and transferring between terminals is approximately a 5-6 minute walk.
When entering the United States from overseas, you must obtain your luggage and bring them through Customs and Border Protection (CBP). You will need to check them back into the airlines to make your next flight. Baggage not obtained after your international flight will not get to your final destination.
