You can absolutely visit Islands of Adventure in just one day especially with Early Park Admission. You may not get to see everything or ride every ride in the park however, you will be able to get your top attractions done in just one day.
Early Park Admission at Universal Volcano Bay, Universal Studios Florida, and Universal Islands of Adventure is available up to one (1) hour prior to park opening.
Universal Orlando Operating HoursDuring the off-season, parks may be open as few as 8 hours (9 a.m.–5 p.m.). At busy times (particularly holidays), they may operate 8 a.m.–11 p.m. Volcano Bay is open anywhere from 10 a.m. to 6 p.m. in the off-season to 9 a.m. to 9 p.m. during the summer.
Plus, the park is considerably more than some other waterparks like SeaWorld's Aquatica. Having shelled out that money ourselves and spending the day at the park, we are happy to say that yes, Volcano Bay is worth the money.

What I'm trying to say is regardless of why you are visiting Universal Orlando we always recommend arriving 30-45 minutes early if you're unsure. We find the best time to arrive at Universal Orlando is always early, especially when you're trying to get a lot done in a short amount of time.

Overall we would always lean towards Islands of Adventure for early park admission. The main reason is this park is home to the newest Universal ride the VelociCoaster. As you can imagine this ride can have one of the longest wait times in the parks throughout the day.
Islands of Adventure Arrival Tips:Arrive about 45 minutes prior to arrival if you have tickets, arrive 60 minutes prior if you need to purchase admission.
It's not 100% necessary because there are lots of water sprinklers across the paths. I'm a bit mixed on them. Some slides have to be barefoot, so there are shoe racks at the entrance. However, often the exit to the slide is ages away from the shoe rack to you have to hoof it back to get your shoes.
